Cassia vs Cinnamon

What is Cassia? Cassia is a close relative to Cinnamon, the two are often mistaken for the same herb, however, they are different and are harvested from different, yet similar, trees. I will note that when referring to “Cinnamon” in this article I mean “Ceylon” or “True” Cinnamon. In the US, and many other countries, it is actually legal to label cassia as cinnamon even though they are separate spices because of their similarities in color, taste and physical appearance.
