With healthy eating comes a lot of responsibility. The hardest part is trying to find recipes that work with your diet and doesn’t take a million hours to make. Most people do not have the time or the energy to get up in the morning and put together a huge breakfast, especially if the meal is complicated. So here are ideas and recipes for some breakfast items you can pretty much make on the fly.

  • Eggs and Greens
    • Ingredients
      • 1 Tbsp olive oil
      • 1 cup sliced mushrooms
      • 2 cups spinach
      • 1 egg
    • How to prepare
      • Saute mushrooms and spinach in a heated skillet. Only add half of the olive oil in the step because you’ll need the rest for your eggs.
      • Remove cooked mushrooms and spinach and using the same skillet and the rest of the olive oil cook your egg sunny-side up.
      • When it is finished put all the items together on a plate and you are done.
  • Parfait
    • Ingredients
      • 1/3 cup of Greek Yogurt
      • 1 cup of fruit of your choosing (most prefer mixed berries)
      • 1 cup of granola
    • How to prepare
      • In a glass bowl place scoop 1/3 cup of the Greek Yogurt.
      • Next place 1 cup of your choice of fruit.
      • On the top put 1 cup of granola.
      • Since it gets mixed together, the order of the fruit and the granola doesn’t matter. It’s a personal choice.
  • Oatmeal with Nuts and Berries
    • Ingredients
      • 1 packet Original Quaker Instant Oatmeal
      • 1 cup skim milk
      • 2 Tbsp chopped pecans
      • 1/2 cup raspberries
      • 1/2 cup blueberries
    • How to prepare
      • Empty the packet of Oatmeal into a microwave safe bowl and add the cup of skim milk.
      • Follow the heating instructions that is located on the Oatmeal package.
      • When it’s finished layer your oatmeal with the 2 tbsp of chopped pecans, ½ cup of raspberries and ½ cup of blueberries.
      • The amount of pecans and fruit you use is optional and based on personal preference. So is the type of fruit that you use with the oatmeal. Some people prefer strawberries or peaches.
      • You can always add some cinnamon to the mix for extra flavor.

There are loads of other recipes that you can find online. The great thing about food is you can turn almost any dish into a healthy one if you substitute vegetables for ingredients high in sugar or calories.
